Hubby’s BEST EVER Vegetable Soup I taught Hubby how to make vegetable soup, and he changed it up to create the best vegetable soup I’ve ever had.
1 onion, chopped 2 large carrots, diced 2 stalks of celery, diced 28 oz can of no salt added diced tomatoes (or crushed tomatoes) 2 medium potatoes cut small 1 cup of frozen corn 1 cup fresh or frozen spinach or mixed greens 1 cup fresh or frozen green beans or broccoli 1 large beet, sliced (optional) ¼ - ½ cup dried soup mix 8 cups of vegetable broth 1 tbsp onion powder 1 tbsp garlic powder Add to a large pot, bring to a boil, then simmer until the vegetables are fork-tender
